Beer-B-Que Pork

This is our grandson’s favorite barbecue dish. His daddy, Luther, came up with this simple

recipe. Keeping it simple is the best way to bring out the combined flavors of pork tenderloin

and a great beer. Experiment with your favorite beers to make this your own recipe.


2 tablespoons vegetable oil
1 3-pound pork tenderloin, cut in half
1 medium onion, sliced into thin rings
12-ounce bottle beer




1. Place oil in pressure cooker and turn to medium heat. Add pork and brown on all
sides.
2. Nestle two pieces together and place onion slices on top. Pour beer over the top.
3. Lock cooker lid and bring to high pressure. Adjust heat to maintain pressure and
process on HIGH for 45 minutes. Quick release pressure. Remove lid carefully to
prevent scalding from escaping steam.
4. Shred pork with a fork. Serve on sandwich rolls with a squeeze of barbecue sauce and
vinegar-based cole slaw.
