FRIED MUSHROOMS WITH GARLIC

AND PARSL


1 lb. (500 g) porcini
mushrooms
5 tsp. (25 ml) extra-virgin
olive oil
1 clove garlic
1 tbsp. fresh parsley,
chopped
salt and pepper


Trim the mushrooms and clean them thoroughly, removing the soil and wiping
them with a damp cloth. Slice them about 1/12 inch (2mm) thick.
Heat the olive oil in a skillet and sauté the chopped garlic until fragrant; do not
burn it. Add the mushrooms and the parsley and cook until the mushrooms are
delicate. Season to taste with salt and serve and pepper .
