and Caper Vinaigrette Sauce

 Perhaps best described as a sun-dried tomato pesto, this delicious sauce will be

the perfect finishing touch for your pasta when fresh tomatoes are not in season.
Made of pantry staples, this is also a great go-to dinner on nights when the fridge
is on the empty side.
PREPARATION: 15 minutes
PROCESSING: 10 to 15 seconds

1 pound (454 g) whole wheat pasta
3 tablespoons (45 ml) olive oil
2 tablespoons (30 ml) red wine vinegar
½ cup (55 g) sun-dried tomatoes in olive oil, rinsed, well drained, and chopped into pieces
1 tablespoon small capers, rinsed and well drained
1 tablespoon fresh thyme leaves
1 garlic clove, peeled
¼ teaspoon ground black pepper
1. Cook the pasta as per the bundle bearings. Drain and keep warm.


2. Meanwhile, place the olive oil, vinegar, tomatoes, capers, thyme, garlic, and
pepper into the Vita blend holder in the request recorded and secure the top. Select
Variable 5. Turn the machine on and blend for 10 to 15 seconds.
3. Transfer the hot pasta to a large serving bowl, spoon the sun-dried tomato
mixture on top, and generously toss to coat the pasta well. Serve hot.
